🛒 Ingredients

  • 2 packs pork tenderloin
  • 1 jar Walkers Wood Jamaican Jerk wet rub (or your favorite jerk rub)
  • 1 large can black beans
  • ½ sweet Vidalia onion, chopped
  • 2 cloves garlic, minced
  • 1 lemon – zested and juiced
  • 1 lime – zested and juiced
  • 2 Tb fresh chopped cilantro
  • 1 Tb achiote
  • ½ Tb oregano
  • Salt and pepper to taste
  • 2 Tb olive oil

🍳 Preparation

1️⃣ Sauté onions and garlic in olive oil until onions begin to turn clear.
2️⃣ Add achiote and oregano with the black beans; reduce heat to a low simmer.
3️⃣ Rub each pork tenderloin with 1 tablespoon of Walkers Wood Jamaican Jerk rub and let sit while you preheat the grill.
4️⃣ Let the beans simmer for 20 minutes before starting the pork.
5️⃣ Grill the pork on medium-high heat about 5–6 minutes per side until cooked through and beautifully charred.
6️⃣ Ten minutes before serving, add lemon and lime zest plus juice and fresh cilantro to the beans. Salt and pepper to taste.


🌶 Chef Tips

This goes amazing with rice! If you don’t have a zester, use a knife to shave a couple pieces of the citrus skin and chop finely — you’ll get the same bright flavor.
