🍎 Apple Cider Pork with Apple Slaw

I learned this recipe at my very first Sous Chef job — and over the years, I’ve added my own twist that takes it to a whole new level of flavor. The apple cider reduction balances sweet and savory perfectly, while the apple slaw brings in a crisp freshness.

🧂 Ingredients

  • 1 two-pack pork loin

  • 2 Tbl minced garlic
  • 40 oz apple cider
  • 8 Tbl brown sugar
  • 6 Tbl bacon bits
  • Mashed potatoes
  • Apple slaw

🍳 Preparation

  1. Clean and cut pork into 1-inch sections.
  2. Mix olive oil, garlic, salt, and pepper to make a marinade.
  3. Coat pork sections and let rest 10 minutes.
  4. Place pork pieces in a 1-gallon freezer bag and pound thin until about palm-sized.
  5. Sear on medium-high heat, then add apple cider, brown sugar, and bacon bits.
  6. Bring to a boil, then reduce to medium-high and cook until the liquid reduces and thickens (about 1½ cups remaining).
  7. Serve 2–3 slices over garlic mashed potatoes with extra sauce and top with apple slaw.

🔪 Chef’s Tips

  • Use a mandolin slicer to make perfect, even slices for your apple slaw. It saves time and ensures every bite has the right crunch!

  • If you don’t have a meat mallet, use the bottom of a sturdy coffee cup to tenderize the pork.
  • Double the recipe easily — a gallon freezer bag can handle extra portions.
