This Apple Slaw recipe came about as a topper for several different proteins I love to cook — pork, chicken, even grilled fish. But over the years, I found out it’s just as amazing all by itself as a side dish. It’s fresh, bright, and full of that sweet-tart balance that only Granny Smith apples can bring.

🧂 Ingredients

  • 4–5 Granny Smith apples
  • 2 bunches green onions
  • 2 Tbl minced garlic
  • 1 cup salad oil (olive oil works beautifully too)
  • 1 large egg
  • ½ tsp white pepper
  • Salt and pepper to taste
  • 3 limes
  • 1 can Sprite
  • ½ small green cabbage
  • 2 Tbl apple cider vinegar
  • ¾ cup sugar

  1. Using a mandolin slicer. cut apples into fine, matchstick-style slices down to the core.  https://amzn.to/3Ji3sFO
  2. Place apples in a large bowl, add Sprite and juice from one lime. Let stand 10 minutes, then drain well.
  3. In a blender, add the white parts of the green onions (reserve the green tops). Add garlic, juice of two limes, lime zest, white pepper, sugar, egg, and apple cider vinegar. Blend on high 30 seconds.
  4. While blending, slowly drizzle in the oil until emulsified (may need an extra ½ cup).
  5. Slice cabbage thinly and cut green onion tops on a bias as thin as comfortable.
  6. Combine cabbage, green onion, and drained apples in a large bowl. Toss with enough dressing to coat evenly.

  • The Sprite soak keeps apples bright and crisp — a simple trick that brings out their natural flavor.
  • If you don’t have a mandolin, use a sharp knife or the slicer side of a box grater.
  • The dressing also doubles as a great coleslaw base — keep extra in the fridge for up to 3 days.
