A Simple Side Dish With Deep Flavor

This Oven Roasted Acorn Squash is one of those dishes. My mom taught me this recipe just a couple of years ago, and it quickly became one of my favorite fall and winter sides. It’s naturally gluten-free, easy to prepare, and delivers a rich balance of sweetness, acidity, and comfort.
I love this dish alongside roasted chicken, but it’s also incredible paired with something bold like a Jamaican jerk pork loin. The natural sweetness of the squash brings perfect balance to spice and smoke.

Recipe Overview

Prep time: 5 minutes
Serves: 2
Diet: Naturally Gluten-Free
Ingredients
- 1 large acorn squash
- 2 Tbsp olive oil
- 4 Tbsp butter
- 2 Tbsp reduced balsamic vinegar
- Splash of champagne vinegar
- Salt & pepper to taste
(Optional: fresh thyme leaves)
Preparation
- Preheat oven to 425°F.
- Quarter the acorn squash and place wedges skin-side down on a sheet pan.
- Drizzle olive oil over the squash and season with salt and pepper.
- Add ½ cup water to the pan and place in the oven.
Roast for 50 minutes until tender and caramelized. - Remove from oven and place 1 Tbsp butter on each wedge.
- Drizzle all pieces with reduced balsamic vinegar and a light splash of champagne vinegar.
- Serve immediately.

- Fresh thyme adds a beautiful aromatic finish — de-leaf and sprinkle over squash before roasting
- The water in the pan helps steam early, then evaporates to allow caramelization
- Reduced balsamic adds depth without overpowering the squash
- This dish pairs especially well with roasted meats or bold spice profiles
