A Simple Side Dish With Deep Flavor

This Oven Roasted Acorn Squash is one of those dishes. My mom taught me this recipe just a couple of years ago, and it quickly became one of my favorite fall and winter sides. It’s naturally gluten-free, easy to prepare, and delivers a rich balance of sweetness, acidity, and comfort.

I love this dish alongside roasted chicken, but it’s also incredible paired with something bold like a Jamaican jerk pork loin. The natural sweetness of the squash brings perfect balance to spice and smoke.


Recipe Overview

Ingredients

  • 1 large acorn squash
  • 2 Tbsp olive oil
  • 4 Tbsp butter
  • 2 Tbsp reduced balsamic vinegar
  • Splash of champagne vinegar
  • Salt & pepper to taste

(Optional: fresh thyme leaves)

Preparation

  1. Preheat oven to 425°F.
  2. Quarter the acorn squash and place wedges skin-side down on a sheet pan.
  3. Drizzle olive oil over the squash and season with salt and pepper.
  4. Add ½ cup water to the pan and place in the oven.
    Roast for 50 minutes until tender and caramelized.
  5. Remove from oven and place 1 Tbsp butter on each wedge.
  6. Drizzle all pieces with reduced balsamic vinegar and a light splash of champagne vinegar.
  7. Serve immediately.

Chef Tips

  • Fresh thyme adds a beautiful aromatic finish — de-leaf and sprinkle over squash before roasting
  • The water in the pan helps steam early, then evaporates to allow caramelization
  • Reduced balsamic adds depth without overpowering the squash
  • This dish pairs especially well with roasted meats or bold spice profiles
