Big Flavor, No Grill Required

These ribs are proof that you don’t need a smoker or a grill to get tender, flavorful BBQ ribs.

I’ve been making ribs this way for years — slow in the oven, finished with a homemade BBQ sauce that’s simple, rich, and comforting. This method delivers fall-apart tenderness every time and works perfectly when outdoor cooking isn’t an option.

They’re gluten-free and celiac-friendly, easy to prepare, and packed with flavor. And if you love burnt ends like my mom does, this recipe gives you plenty of opportunities to finish them just the way you like.

Recipe Overview

Ready in: 180 minutes
Prep time: 15 minutes
Serves: 2
Diet: Gluten-Free / Celiac-Friendly

Ingredients

Ribs

  • 1 rack of ribs
  • Worcestershire sauce
  • Garlic salt
  • Water (for pan)

Handmade BBQ Sauce

  • 1 onion, diced
  • 2 Tbsp butter
  • ½ cup Worcestershire sauce
  • 2 cups ketchup
  • Salt & pepper to taste

Preparation

1. Prep the Ribs

Remove or score the silver skin on the back of the ribs.

Coat the rack with Worcestershire sauce and season generously with garlic salt.

2. Slow Cook

Preheat oven to 300°F.

Place ribs on a sheet pan, add a small amount of water to the pan, and cover tightly.

Bake for 3 hours, allowing the ribs to become tender and juicy.

3. Make the BBQ Sauce

While the ribs cook, melt butter in a 4-quart saucepan over low heat.

Add diced onion and slowly caramelize until soft and golden.

Increase heat to high and add ½ cup Worcestershire sauce. Reduce by about .

Add ketchup, garlic seasoning, salt, and pepper. Reduce heat to low and let simmer, stirring occasionally.

4. Sauce the Ribs

During the last 40 minutes, uncover the ribs and generously coat with BBQ sauce.

Return to oven uncovered.

Chef Tips

  • My mom loves the burnt ends — finish under the broiler for 5–10 minutes if you like extra caramelization
  • For a smoky note without a smoker, add one single drop of liquid smoke to the water in the pan
  • These ribs reheat well and stay tender
  • Low heat and patience are the secret
