A Simple Trick I’ve Used for Years

This is one of those simple kitchen tricks I’ve used at home for as long as I can remember.

These Garlic Wedge Potatoes are easy, reliable, and always a hit. Crispy on the outside, soft on the inside, and full of flavor — without any complicated steps. I learned this method from my mom when I was a kid, and it’s stayed in regular rotation ever since.

They’re a favorite side for just about anything grilled, and hands down one of my kids’ favorite versions of homemade fries. My mom still loves these served alongside a whole roasted chicken or a grilled jerk pork loin. Simple food, done right.

Ingredients

  • Russet potatoes
  • 2 Tbsp granulated garlic
  • 1½ Tbsp granulated onion
  • 1½ Tbsp Lawry’s seasoning salt
  • 1 tsp black pepper
  • 3 Tbsp mayonnaise

Preparation

  1. Preheat oven to 425°F.
  2. Clean potatoes and cut into wedges lengthwise.
  3. Place wedges into a 1-gallon zip-top bag.
  4. Add remaining ingredients to the bag, seal, and shake until evenly coated.
  5. Line a sheet tray with wax paper and spread wedges out evenly.
  6. Bake for 55 minutes, turning once if desired.
