
A Cold-Night Favorite from the Mizzupa Days
This soup goes back to my time cooking at Mizzupa Restaurant, and it quickly became one of those dishes that people remembered and came back for.
It’s rich, comforting, and tastes exactly like the name suggests — a cheeseburger in a bowl. Over the years I’ve made a few small adjustments to make the recipe my own, but the heart of it stayed the same.
It’s quick, hearty, and perfect for colder nights when you want something that sticks with you.
Kids love this one.
Back in the restaurant days I personally liked serving it over egg noodles, but to keep this version gluten-free, we serve it straight as a soup with fresh toppings.

Ingredients
- 1 lb ground chuck
- 2 Tbsp butter
- 1 onion, diced
- 2 cups whole milk
- ½ cup heavy cream
- 1 Tbsp granulated garlic
- 1 Tbsp granulated onion
- 1 Tbsp herbs de Provence
- 2 cups beef stock
- 1 Tbsp Dijon mustard
- 6 Tbsp corn starch
- 1 lb sharp cheddar cheese, shredded
- shredded lettuce (garnish)
- 1 cup diced tomato (garnish)
- chopped parsley
- salt & pepper to taste
Preparation
- Brown the ground chuck and drain excess fat.
- In the same pot, melt butter and sweat diced onions until translucent.
- Add the cooked meat and seasonings to the pot.
- Pour in the milk, cream, and beef stock.
Simmer 10–15 minutes. - In a separate bowl make a slurry with cornstarch and ½ cup water.
- Add slurry to the soup and bring back to temperature.
Simmer 5 minutes until thickened. - Once thickened, add shredded cheddar and 4 Tbsp chopped parsley.
- Stir until cheese melts completely.
- Garnish with shredded lettuce and diced tomatoes before serving.

Chef Tips
- Always add cheese after thickening to prevent separation
- Adjust final texture with additional stock if needed
- Sharp cheddar gives the best flavor
- Fresh toppings make the soup taste like a cheeseburger
