
A Family Favorite That Never Gets Old
This is one of those recipes that has simply stood the test of time for me.
I’ve been making this BBQ Meatloaf forever — in restaurants and at home — and it has slowly but consistently become one of my most loved comfort meals. I’ve made it with regular crackers over the years, but the gluten-free version works just as well and keeps it celiac-friendly without sacrificing texture or flavor.
At this point, my kids won’t even eat their mother’s version anymore because they’ve been spoiled by this one. 😆

Ingredients
- 1.5 lbs ground chuck
- 1 egg
- 2 packs gluten-free crackers

- Salt & pepper to taste
- ½ onion, diced
- 1 green pepper, diced
- 8 oz canned diced tomatoes, drained
- 2 Tbsp Worcestershire sauce
- ½ cup your favorite BBQ sauce
Preparation
- Preheat oven to 350°F.
- In a large mixing bowl, add all ingredients except the BBQ sauce.
Crush the crackers by hand as you mix — don’t pulverize them. - Mix just until the seasoning is evenly distributed.
(Do not overwork the meat.) - Place mixture into a casserole dish and shape as desired.
- Add 1 cup of water to the pan and bake uncovered for 45 minutes.
- Increase oven temperature to 400°F, coat the loaf with BBQ sauce, and return to the oven.
- Cook an additional 15–20 minutes, depending on how glazed you like your BBQ finish.
- Remove from oven and let rest before slicing.
